<p>Skøn opskrift på jomfruhummer fra Jamie Olivers Recipe Yearbook 2011/2012 som vi købte enroute to Tenerife tilbage i april. Fyldt med skønne opskrifter, især på fisk og skaldyr, hvilket er perfekt på Tenerife da man kan købe lækker skaldyr stort set alle steder.</p>
<p><strong>Jomfruhummer med citron og pebersmør &#8211; forret eller let frokost for 2 personer</strong></p>
<ul>
<li>500 g jomfruhummer (8-10 friske styks, ellers optøet)</li>
<li>200 ml hvidvin</li>
<li>En lille håndfuld brødkrummer</li>
<li>Olivenolie</li>
<li>1 citron</li>
</ul>
<p><strong>Citron og pebersmør</strong></p>
<ul>
<li>Ca. 50 g blødt smør</li>
<li>1 tsk sort peber</li>
<li>Revet citronskal fra en 1/2 citron</li>
<li>Lidt havsalt</li>
</ul>
<p>Start med at lave citron og pebersmørret ved at blande de 4 ingredienser. Stil smørret i køleskabet.</p>
<p>Hæld hvidvin og de friske jomfruhummer i en pande ( hvis du bruger frosne jomfruhummere skal de være optøet inden du hælder dem ned i hvidvinen). Skru op for varmen og lad jomfruhummerne koge i cirka 5 minutter under låg.</p>
<p>Tag panden af og lad jomfruhummerne køle lidt ned inden du lægger dem med maven nedaf på et skærebræt, flæk dem på langs, og  fjern den lille sorte indvold.</p>
<p>Anret jomfruhummerne med maven opad på en grillpande eller på et ovnfast fad. Fordel citron og pebersmørret ovenpå i små klatter og drys med brødkrummerne. Hæld en smule olivenolive over og skær eventuelt citronen i halve og læg den ned i fadet hvis du gerne vil have den kommer med i ovnen.</p>
<p>Grill jomfruhummerne i ovnen i 5-10 minutter indtil de er gyldne. Riv lidt revet citronskal over sammen med citronsaft og server med lækkert brød eller en grøn salat.</p>

<p>Når solen skinner skal der spises frokost i solen og en ny favorit i kvarteret er Haven på Ny Carlsberg Vej hvor man enten kan spise smørrebrød til frokost, drikke en fyraftens øl eller bare læne sig tilbage og nyde aftensolen når der tændes op i grillen om aften. Over sommeren spilles der også jazz i Haven på forskellige dage så det er bare om at holde øje på deres facebook side hvornår det går løs.</p>

<p>Denne søndag stod menuen på smørrebrød for vores vedkommende. Haven har et smørrebrødskort med cirka 10 forskellige slags smørrebrød til kun 39 kr stykker eller 109 kr for 3 styks. Ikke kun er det store stykker smrrebrød, de er også lækkert anrettet og bedre end hvad man kan finde andre steder i byen.</p>
<p>Det kolde smørrebrødskort tæller blandt andet æg og rejer, æg og tomat, kartoffelmad med bacon, fiskefilet, leverpostej og roastbeef for bare at nævne et par stykker. Udover smørrebrød findes der også et par enkelte lune retter til frokost.</p>
<p>Vi spiste æg og rejer, kartoffelmad med bacon og leverpostej og det var virkelig lækkert.</p>

<p>Hvis man ikke lige er sulten når man kommer forbi serverer Haven også kaffe og kage og derudover har de et ret ok øl kort og happy hour fredag eftermiddag :)</p>

<p>Jeg har aldrig rigtig fundet opskriften på den helt rigtige brownie, sådan en som er dejlig svampet indeni &#8211; men NU er den der! Jeg fandt denne skønne opskrift hos <a href="http://emilysalomon.dk/2012/04/recipe-simple-yet-perfect-brownies/" target="_blank">Emily Salomon</a> og hvis du er vild med chokolade, så er det bare om at komme i gang med at bage.</p>
<p><strong>Brownies &#8211; ca. 10-12 pæne stykker</strong></p>
<ul>
<li>180 g smør</li>
<li>180 g mørk chokolade</li>
<li>3 æg</li>
<li>Kornene fra en halv vanillestang eller 1 stor tsk vanillesukker</li>
<li>250 g sukker</li>
<li>110 g mel</li>
<li>1/2 tsk salt</li>
</ul>
<p>Start med at tænde oven på 180 grader og beklæd en lille bradepande med bagepapir.</p>
<p>Smelt smør og chokolade i en lille gryde og rør det godt sammen.Tag det af varmen og lad det køle lidt af. Pisk æg, sukker og vanille sammen i en skål og tilsæt herefter chocolade/smør blandingen lidt efter lidt. Rør det hele godt sammen.</p>
<p>Tilsæt nu mel og salt og vend dejen sammen hvorefter den hældes op i formen og bages i ovnen i cirka 25 minutter. Kagen er færdig når det krakelerer på toppen men stadig er dejlig svampet indeni.</p>
<p>TIP: Man kan eventuelt tilsætte hakkede nødder af en slags eller drysse med lidt flormelis på toppen inden kagen spises, haps!</p>

<p>Ok indrømmet, det er ikke Masterchef potentiale men det er altså min favorit måde at spise bønner på &#8211; måske fordi der indgår gris i opskriften?</p>
<p><strong> Grønne bønner med bacon</strong></p>
<ul>
<li>250 g grønne bønner (friske eller frosne)</li>
<li>1 stort løg</li>
<li>1/2 fed hvidløg</li>
<li>En håndfuld bacon eller pancetta</li>
<li>1 liter bullion (grøntsag eller gris)</li>
<li>Salt og peber</li>
</ul>
<p>Vask og nip bønnerne hvis de er friske og stil dem til side.</p>
<p>Skær løg, hvidløg og bacon i tern og brun det i en dyb pande eller gryde. Når det har taget farve hældes bullionen ved og det bringes i kog. Skru lidt ned for varmen (det skal stadig boble lidt) og tilsæt bønnerne.</p>
<p>Kog bønnerne under låg til de er møre og alt bullionen er væk &#8211; det tager cirka 20 minutter. Du kan eventuelt tage låget af de sidste 5 minutter. Smag til med salt og peber og sever straks som tilbehør til kød, kylling mm.</p>

<li>1 vaniljestang</li>
</ul>
<p>Start med at vaske raberberne i koldt vand og skær enderne af. Skær rabarberne i stykker på ca. 1 cm og kom dem i en gryde sammen med sukkeret. Flæk vaniljestangen og kom vaniljekornene op i gryden. Lad kompoten koge sammen indtil den har den ønskede tykkelse, haps.</p>

<p>Min favorit crumle kage, denne gang med rabarber mhmmm&#8230;</p>
<p><strong>Crumble kage med rabarber og hasselnødder<br />
</strong></p>
<ul>
<li>300 g mel</li>
<li>200 g smør</li>
<li>100 g sukker</li>
<li>1 tsk vanilje sukker</li>
<li>1 tsk bagepulver</li>
<li>Ca. 400 g rababer</li>
<li>En håndfuld hakkede hasselnødder</li>
</ul>
<p>Start med at vaske rabarberne og skær dem i små stykker.</p>
<p>Smelt smørret og hæld det over i en skål hvor det røres sammen med sukker og vanilje sukker. Herefter røres mel og bagepulver i lidt af gangen indtil kagedejen bliver til crumble.</p>
<p>Hæld cirka 2/3 dele af dejen i en springform med bagepapir og tryk den ned i formen og lidt op af siden. Anret herefter med rabarberne ovenpå dejen så de er spredt ud over bunden. Drys med de hakkede hasselnødder.</p>
<p>Brug den sidste 1/3 del af dejen til at smuldre over rabarberne så de bliver en smule dækket.</p>
<p>Bag kagen i ovnen ved 160 grader i cirka 40-45 minutter.</p>

<p><strong>Tagliatelle med rejer og tomat – ca. 4 personer</strong></p>
<ul>
<li>500 g friskkogte store rejer</li>
</ul>
<ul>
<li>½ dl. hvidvin</li>
</ul>
<ul>
<li>½ dl. vand</li>
</ul>
<ul>
<li>2-4 fed hvidløg (efter behag), hakket eller skåret i små skiver</li>
</ul>
<ul>
<li>1 dåse hakkede tomater</li>
</ul>
<ul>
<li>En knivspids chiliflager</li>
</ul>
<ul>
<li>salt + peber</li>
</ul>
<ul>
<li>En håndfuld hakket bredbladet persille</li>
</ul>
<ul>
<li>400-500 g tagliatelle</li>
</ul>
<p>Kog tagliatellen efter anvisningen på pakken.</p>
<p>Pil rejerne og stil dem til side. Varm en spsk. olie op i en dyb pande eller gryde og brun chili og hvidløg. Tilsæt herefter rejerne og hæld vinen over. Lad det stå et minut eller to til det begynder at koge og tilsæt så vand og derefter de hakkede tomater. Lad saucen koge i et par minutter og tilsæt så den hakkede persille.</p>
<p>Hæld vandet fra tagliatellen og hæld den ned i tomat saucen sammen med rejerne. Vend det hele godt sammen og smag til med salt og peber &#8211; server straks.</p>

<p>Retten er ideel hvs man har kolde kartofler tilbage fra dagen før.</p>
<p><strong>Morgenmadspande med kartofler, æg og chorizo &#8211; 2 personer</strong></p>
<ul>
<li>1 stort løg</li>
<li>1-2 fed hvidløg</li>
<li>150 g chorizo</li>
<li>3 store kogte kolde kartofler</li>
<li>4 æg</li>
<li>Et bundt bredbladet persille</li>
</ul>
<p>Hak løg og hvidløg og brun dem i en ovnfast pande. Skær chorizoen i små skiver eller stykker og steg dem med indtil de har taget farve. Skær de kogte kartofler i mindre stykker og hæld dem op i panden. Steg hele blandingen i yderligere 5 minutter.</p>
<p>Hvis panden er ovnfast slår du nu de fire æg ud over biksemaden. Hvis panden ikke er ovnfast hældes biksemaden over i et ovnfast fad og æggene slås ud over. Bag biksemaden i ovnen i cirka 10 minutter eller indtil æggehviderne er blevet faste.</p>
<p>Drys med salt, peber og friskhakket bredbladet persille. Server eventuelt med lækkert brød eller toast.</p>
